Las Chimeneas ('The Chimneys' in Spanish) is a restaurant and guesthouse in the whitewashed village of Mairena in the far eastern side of La Alpujarra. The geographical remoteness and fascinating history of this region of southern Spain has helped to create a distinct way of life and culinary tradition that has survived, more or less unchanged, for centuries. David and Emma Illsley, owners of Las Chimeneas, share in this book their love for the community that they have been a part of for two decades. With recipes from the restaurant's Alpujarran cooks, plus profiles on local produce and traditions and interviews with characterful locals, it offers a sensitive insight into a traditional society on the cusp of change.
